First, let me start off by saying that, yes, I am still alive. Colleen has been on my case nonstop about her having more posts than me during Vegan MoFo. Part of it has been me being busier than I’m used to at school, part of it is me not having motivation to write (big surprise), and part of it is Colleen stealing my thunder on days that I do actually wanna post. Well, I plan on writing a post every day from now until the day I die so get ready. (OK, there is no way that’s gonna happen but let’s just pretend.)

I’m not sure what it was but for some reason I got in the mood for some seafood. Granted, I was never a big seafood person back when I ate it but I couldn’t resist the urge to try something new and exciting. I’m signed up for the Meatless Monday newsletters—which are decent, outside of their occasional obsession with “healthy” dairy/egg recipes—and a while back they featured a recipe for mock crab cakes. I don’t ever remember eating crab cakes but they sounded pretty good and the recipe proclaimed them to be extremely easy (and quick) to make, so I went for it. Big mistake!
