Redemption… sorta
Not being one to easily give up (often to my detriment), I decided to have another go-round with the little buggers known as “Jelly Donut Cupcakes” from Veganomicon. I triple checked to make sure that I had the correct amount of ingredients and everything was good to go. Mix ‘em up. Pop ‘em in the oven. Relax for 21-23 minutes. Enjoy.
Easy enough, right?
Well, actually it was very easy but the result wasn’t as splendid as I had hoped for. They definitely turned out a bit better than my last batch but I don’t think 23 minutes was enough time in the oven. No, I didn’t give into temptation and peak on them every 5 minutes. I’m blaming this problem on my silicone cupcake liners. The recipe undoubtedly assumed you would be using a traditional metal muffin pan which I think cooks them slightly quicker than the silicone. Since they are filled with jelly, the toothpick trick was out so I had to rely on my faith. Maybe you can understand why I’m not a very religious person
